Chicken Pilaf

John’s Chicken Pilaf

Ingredients

  • 6 chicken thighs or pieces of your choice
  • 2 cups of rice
  • 1 Pint chicken broth
  • 1 Pint water
  • 1 medium onion Chopped (1/4 inch)
  • 2 celery stalks chopped
  • ½ tsp salt
  • 1/4 tsp pepper
  • ¼ tsp tarragon
  • 1 tsp basil
  • 2 Tablespoons olive oil

Directions

  • Toast rice in olive oil for 5 minutes, remove and set aside
  • Brown chicken in in olive oil
  • Add onions and celery and sauté until translucent
  • Add the rest of ingredients with rice, and bring to a boil, reduce heat and simmer for 20 -30 minutes until rice is done.
